Mother Daughter Picnic And The Quickest Way To Boil Eggs

This morning Caitlyn and I enjoyed a lovely picnic under our favorite walnut tree. I am savoring these precious moments with my sweet girl as I have realized just how quickly time passes when you have a little one… other parents warned me of this phenomenon when I was pregnant, and I know I heeded their advice, but wow, I didn’t realize until after my daughter was born just how quickly time flies! It zooms by faster than I anticipated. Like crazy fast!
Seems like just last week Caitlyn was still in diapers and cooing at the simplest playful gesture. Fast-forward two and a half years, she is nearly fully potty trained, getting herself dressed, speaking in complete sentences and cracking jokes with her advanced sense of humor just because she loves to make other people feel seen and share her joy. She is pure joy. I am honored to be her mama, and I am blessed beyond words that God would entrust me with the responsibility to help her grow into the beautiful woman she is to become. For that I am grateful and want to soak in these moments fully present and with intention.

Because special moments like these often arrive without warning, there was little time to plan our special picnic breakfast this morning, so we just kept it simple. Caitlyn helped me gather some tomatoes and herbs from our garden – which by the way she is so proud of. And it makes my heart sing that she enjoys tending the garden with me… We toasted bread and sang along to the Disney station playing on Google Home while I boiled a few eggs.
When the eggs and toast were ready, we plated our meal, drizzled everything with some fresh, local olive oil and finished it with a sprinkling of sea salt across the top. So fresh. So delicious. Simply, the best way to start our day!
The easiest, and in my opinion, quickest way to boil eggs
Ingredients:
6 eggs
water
Method:
Fill a small saucepan with six eggs and cover with about an inch of cold water.
Cover the pot with a lid and bring the water to a boil over medium-high heat.
When the water comes to a rolling boil set a timer for 4 minutes*.
Meanwhile, prepare and ice-bath.
When the timer goes off remove the eggs from the pot and submerge them into the ice-bath, stirring gently to move the water.
Let the eggs sit in the ice-bath for a few minutes to stop the cooking process.
Note* 4 minutes will give you a solid, custardy center. Boiling for 5 minutes will yield a fully solid center hard-boiled egg. I typically prefer a 3-minute egg because the center remains just barely runny which I love, however Caitlyn does not 😉 I would suggest just playing around with the timing to decide what you prefer.
